We add yam flour and seaweed to domestic buckwheat flour. They are knead and produced using the famous Echigo water "Ogamidake Oodeguchi Sensui" in Nigata prefecture.
The addition of yam flour to these traditional buckwheat noodles gives them an irresistibly rich and creamy flavour.
